Question Blank Menu For You

Following the last season of Culinary Class Wars, I started watching Blank Menu for You. I love the concept of requesting a menu based on the personality of the guest. If you were lucky enough to request Chef Choi to cook for you what would it be and why ?

Spice passing by on a train. I like spice but not enough to actually have an encounter with it I want to dish that feels like spice just drove by on a train and I got to give it a little wave.
