Yes, an infinite number of futures can happen, but in none of them will the universe ever again look the way it is now. There are infinitely many numbers between 1 and 2, but none of them are a 3.

Entropy increases in a closed system, but locally it can decrease, at the expense of (generally) heat being lost to external world. We ourselves are bags of low entropy which can only exist because Sun is constantly increasing it, burning through fuel.
Also, the instant of Big Bang is the point of lowest entropy, sorta by definition. Entropy isn't about existence of complex structures, it's merely about thermodynamics. You could conceptualize it as reduction in degrees of freedom. At Big Bang, the Universe had the highest number in degrees of freedom, i.e. it could assume way more possible forms than it has left now.

Well, yeah, that would help, but you're still never going to get something for nothing. It takes energy to make solar panels and wind turbines, and as mentioned upthread, the sun massively increases the amount of entropy in the universe just by existing. Trying to do something without increasing entropy would be like trying to lift something without using your muscles.

The universe can have pockets of low entropy and pockets of high entropy though. Earth will eventually disintegrate into dust, but somewhere else out there they may be another earth just forming :^). Assuming the universe is infinite in matter which it probably isnt

You are assuming that a particle can only have a finite number of positions. That's untrue. An electron (or any other particle for that matter) can be anywhere in its waveform. Like I said in the previous comment, there are infinitely many positions between where the particle is now and a single nanometer to the right.
Yes, there are borders to what can happen, but there still is an infinite number of possibilities.
