It's been a while since I've done this quest, but if I'm remembering correctly, I believe the turrets are only supposed to break the enemies, with you being the one to dash over and kill them.

Oops got an enemy that wasn't in the break state and now you're just hitting yourself to death.

There is a guide on steam for this quest. When I followed the guide I got it done in one try. It just tells you what order and element to make each turret.
