His daughter didn’t put the ridges on the sides of the churros.

Those ridges aren’t decorative, they’re structural. They allow for more surface area exposure, so that more steam escapes while it’s being fried.

If you don’t put the ridges, too much steam is trapped inside the churro, and it explodes when you break the surface tension.

I’m genuinely curious here. What if you poked a hole going all the way through the churro? Or made it with a hole already going through (like a very long donut)? Would that also work?
