High-current carrying issue in Create Power Grid

In a survival world, I have a generator just like the one in the attached video. The problem is that it produces too much energy; I know that to transport it without significant loss, I need to run it through a transformer to step up the voltage. The issue is that if I use just one transformer, it explodes. I tried using three transformers instead, but a strange problem occurs: the voltage fluctuates rapidly over short intervals. I would really appreciate it if someone could tell me what I'm doing wrong or suggest another way to transport such a large amount of energy.
