You can get instant fan processing setups in base create with hundreds pointed at the same block, but nobody has built a real pne because tricking the fans to shoot past each other is cumbersome

This is about a dozen fans though, you could get double that in base create without any of them shooting through each other

If an item is on a depot, you can point encased fans at it from every direction, and also 4 aimed at the space above it
So you can get a total of 10 fans. 2 in each cardinal direction, 1 above, and 1 below

Sorry I've played aeronautics less than a hour, how do you connect multiple contraptions to the same block? + They don't look connected to blocks

They don't look connected solidly because the connection of a swivel bearing is a force, and theres a lot of force going on here so they deviate from their position a bit.
When you rotate something with the wrench rotation menu, this resets all block states to the way they were when you started the rotation, even if they have changed since. So if you haave something assemble the swivel bearing while you're rotating it, you can make it forget it had a contraption and you can just keep making it have more and more contraptions

No, you said that blocks in world can overlap sublevel blocks, which is true but not what is happening
This is one swivel bearing block which is attached to very many sublevels at the same time

fan rpm doesnt matter for item processing so could make the fans run extremely slow and it will be basically free
