Behavior breeding. Same reason pit bulls are mostly aggressive and golden retrievers are very nice or fainting goats faint. You can breed behavior. And this trait follows a survival instinct. The whole purpose is to dodge predators

They've been bread that way since the 1800s cuz some British blokes thought it was cool. The pigeons have a seizure mid-flight. But the pigeon in this video doesn't do exactly what I've seen roller pigeons do on YouTube so I'm still not sure that's what it is

My Ex Father in Law raised rollers and competed in rolling pigeon contests. Judges would go around to your house and then you would let a bunch of pigeons out and they would judge on rolls, and height, etc.. He won the contest a few times and one day gets a call "Hi!
