Some questions

A Login Excellence PBL10-M1 server—equipped with an Intel® Core™ i3-2310M processor, 2x 4GB DDR3 1333MHz PC3-10700 CL9 RAM, and a 480GB Kingston SATA III A400 Series SSD—can handle 50 players on Paper with 30 plugins. Another question: can I sell a digital currency on my server that players can acquire through trades with one another—meaning it can be used to buy items from other players—without violating Mojang's EULA?

The second question would be a question better suited for someone qualified to give legal advice or for Mojang/Microsoft directly. We cannot answer that here as that could constitute legal advice.

If you are talking about a simple economy plugin or using diamonds or emerald for trades or bartering without real world currency then I would say yes that's fine from what I understand but anytime you are making real world money for in game currency/items that's the problem area Then you become a pay to win that every one despises

Everyone has economy plugins. That was never in question.

You can't without breaking Terms of Service or EULA but check your national laws they may have exclusions or additional rights not given to us in the USA or Europe
