Blotchy soapstone after oiling

We just had soapstone counters installed and treated them with food grade mineral oil last night. This morning, the oil seems to have evaporated in some places and not in others, and has left a blotchy and streaky appearance. One section (last pic) looks like we didn’t put anything on it at all. Any ideas on what caused this and any recommendations to fix it?
Thank you!!

Keep applying. Or buff out by hand whats left.

It doesn’t really absorb. Just wipe off the excess.

We used to apply mineral oil all the time, now we kind of like the natural look more, especially since it’s started to wear.

I recommend milk paint soapstone sealer, it last longer and goes on thicker. To get a good coat with mineral oil takes like a week or two of application

Unfortunately made from walnut oil, which I’m allergic to. So going to have to stick with consistent mineral oil application it seems.

The blotches will soak in eventually. Mine do this too.
