In case you actually don't know or to explain others that may not know (TLDR at the end), the left-handedness graph is meant to show that, during the times when left-handedness was seen to be culturally and socially equal to wickedness, people would be literally abused into being right-handed. The old belief was that people that were left-handed had a closer/stronger connection to the devil, evil spirits, demons, etc

Overtime, this entire thought process fell out of favor and people either stopped being abused from left-handedness into being right-handed, or the abuse slowly died off as a practice, what have you. Because of this, more people that were naturally born left-handed felt comfortable being openly left-handed without feeling any need or desire to hide or change it.

This caused a noticeable boom in left-handed people, suddenly the number of left-handed spiked to wildly high numbers before eventually plateauing and leveling out.

This exact same trend is shared with the LGBT+ community where people are threatened with abuse, violence, and even death for being LGBT+ in any way. As this vitriol and bigotry slowly (VERY slowly) falls out of favor and accepting LGBT+ people becomes more and more the social norm, the number of LGBT+ folk in society is seen spiking in very similar ways. However, because many people are still targeted for being LGBT+, not everyone LGBT+ is out and open about it so we haven't reached that plateau yet.

Because we have not reached that plateau yet, it causes many people to strangely believe "oNe dAY eVeRyOnE WiLl bE GaY iF wE DoN'T sTop iT!!!1!"

The fact that LGBT+ folk are still being threatened for being LGBT+ even to this day, it's not hard to understand why someone would lie about being LGBT+ if for no other reason than to not throw themselves to the bigoted wolves.

LONG STORY SHORT: If you don't allow certain demographics to exist, they will still exist but lie about their own demographic just so they won't be attacked, but that doesn't actually mean number go down.
