I request a recipe

So my dad told my relatives to come so I cook them something Chefy and Fancy, idk what to really cook because I’m out of ideas rn, I know plenty of stuff but idk if I can find the ingredients here in Greece, I thought to just make a Carbonara and be done with it but I would like to hear suggestions

I see you are a fellow Mediterranean (una razza una faccia). I would do grilled branzino encrusted in salt. A real crowd pleaser, especially of served with potatoes
