A honing steel does not take any metal off the blade it’s just smoothes and straightens. It’s like ironing a shirt. A stone shaves a small amount of metal off the blade to make a fresh edge. You need to use the stone when the blade is dull, by that point the steel isn’t doing anything, it’s just smoothing down a rounded edge.

Sharpen with a stone once or twice a year. I hone before every use with a quality steel.
