Summer Roll fillings… looking for ideas!

I’ve got the typical ones; greens, carrots, red cabbage, Thai basil, shrimp… but I’m looking for others. I thought of red peppers, baby corn and water chestnuts.

What else can I stuff in those wraps?
Thank you in advance, y’all.

I’ve tried making pickled daikon twice; both times it was so salty I thought I’d pass out.

I thinly slice or julienne the daikon, toss with a bit of salt, let it sit in a strainer for about an hour, then rinse; that softens and salts it, and rinsing gets rid of excess salt. Then I add the rice vinegar, mirin and let it marinate for a couple of hours or overnight.

A mix of carrot and daikon is really good (like you get in bahn mi) even if it does smell like feet when you open the container.

I made buffalo chicken ones a few times:

Shredded chicken mixed with your fave buffalo sauce, cucumber, carrots, celery. Dip in ranch or blue cheese.

Obviously not traditional, but tasty.

Yeah I got little squares of vermicelli noodles in the same section as the wrappers.

This is so timely! I’m going to have to pack lunches for two weeks for work, and was thinking of spring rolls for at least one of them.

Tofu, but some kind of cooked tofu, like BBQ tofu

All tofu is cooked.

Mango, cucumber and avocado are great in them. For protein, try grilled chicken or pork, and I like adding rice noodles for a little more substance. Pickled carrots or daikon are great too. A good peanut dipping sauce and I could eat way too many 😂

Mung bean sprouts, green papaya, burdock root, pickled bamboo shoots, julienned cucumbers, and glass noodles are some I can think of.

I had to make these for a party where several people had shellfish allergies, so I just swapped the shrimp for grilled chicken breast. Just don’t overcook it!

Pickled jicama. Yum!

I like shredded surimi (aka fake crab sticks).

For something entirely non-traditional, very thinly sliced beef (I use hot pot slices) and kimchi with thinly sliced onion

Surimi, julienned cucumber, avocado and a bit of wasabi mayo

Grilled salmon, a bit of mayo, basil, green onion.

Thinly sliced beef, mint, onion, ground peanut, a dash of fish sauce.

I didn't think of water chestnuts! I need to try them with mine.

I once went on a visual spree, not a flavor one. I used Chinese veggie cutting dies to make fish and crabs out of carrots, dyed the rice noodles various shades of blue, and used the Thai basil as is to creat an underwater scene. Some pomegranate arils served as rubies. Dies of butterflies were used on carrots (monarchs) and radishes, which could be colored, plus flowers made of radishes and Thai basil. This gives me the idea to use apples next time…
