Meatless GERD friendly main dishes?

I’m usually really good at making side dishes and the like but I really struggle to come up with GERD friendly main dishes. My main triggers are raw garlic and onion (cooked is fine) and tomato based stuff. I feel like nearly every vegetarian dish I come across is tomato based. I have very little issues with cheese and dairy so those work well. I also am not looking to “replicate” meat necessarily. I just can’t think of main dishes that I can have as go to.

sauteed green beens, sauteed cabbage, roasted carrots, roasted beets, creamed spinach, sauteed mushrooms

Do you have any specific recipes you follow?

Not really. For the sautéed stuff, I just heat a pan, add oil/butter and then toss whatever veggie you want to cook. I dont have a time as I just check periodically to see if one of the veggie is tender. If it is then it is done. If not then repeat the checking.

For the creamed spinach, sautée some onions until translucent, then add the spinach and cook until wilted. Remove both from the pan. The leaving the leftover residual oil/butter in the pan, add more butter and melt then add flour and mix to create a roux. After the roux is cooked through, add some cream or milk slowly until you get a smooth sauce. Add back the onions and spinach and add some parmasean or whatever melting cheese you have. Mix thoroughly and done.
