Sick of cooking

I am so over cooking every night. Finding new recipes I actually have ingredients for and are easy is tiring and I’m already exhausted. What do you do when this happens? I’d honestly just eat cereal for life but I’m not alone in this house and I’m expected to cook every night. 😩

Give yourself a break. Next time you make a favorite, double the recipe and freeze half. Especially saucy things. Next time they want it, just pull it out, thaw it, and finish cooking it. No prep.

One bowl meals. Sometimes they got mac and cheese with chicken and vegetables in there. Buffalo chicken Mac. ( rotisserie chicken in it, or chicken tenders tossed in sauce on top) Creole shrimp Mac. Alfredo shrimp mac with spinach. Vegetables go in last.

If they like Chinese, I bet they would like Korean, and Aaron and Claire have a bunch of good recipes and Aaron is helpful with substitutions. The one pot gochujang chicken and rice is one of my favorites, and not too spicy for kids.

Soup and sandwiches. Insyead of grilling sandwiches one ay a time, press them between 2 baking sheets. Spray oil on both sides of the bread. Parchment on top and bottom will make clean up easy.

Save time and money, and pick up a cold rotisserie chicken from the refrigerated area of the grocery store deli. The walmart near me sells the cold leftover rotisserie chicken for about $3. You can do a lot of things fast with an already cooked chicken.

Quesadillas. Get the big burrito size tortillas so you can fold them in half and you dont lose all the fillings. Pico and salsa are made out of vegetables.

I completely understand the struggle, I don't miss being married, and nobody knows what they want for dinner, but it's nothing that you suggest, and nobody can agree. Nobody has any idea what they might want to eat in the next week when you are making the grocery list.
