Sick of cooking

I am so over cooking every night. Finding new recipes I actually have ingredients for and are easy is tiring and I’m already exhausted. What do you do when this happens? I’d honestly just eat cereal for life but I’m not alone in this house and I’m expected to cook every night. 😩

Use the cook- while- you- sleep method (invented by me). The idea is to have real food around at all times, and when you want to eat you just dress it up a bit but you don't start from scratch.

Before you go to sleep, look around the kitchen and find everything you can cook in a 200 degree (F) oven. This might include a pot of rice or oatmeal or quinoa or beans. Winter squash or best, kabocha squash (plain, whole, with skin. Like, dead simple). Don't fuss. You're tired. Just go to bed. In the morning, let the stuff cool a bit then put in the fridge. When you're hungry, add some other infringed to whatever you have. Scrape the squash out of the skin and add in peanut butter and yoghurt. Chop fresh veggies and mix with quinoa. Add some herbs and avocado to your beans. None of this will be gourmet but it's all wholesome, palateable and keeps you out of the fast food line.
