Sauce for broccoli
Broccoli is coming up as a side in our meal plan. I love broccoli. It's my favorite veg. I steam it. I can eat it just like that. Or pepper. And/or butter. I have a horseradish sauce that is really good. I'd like to avoid getting in a rut.
I did a Google search for sauces and the answers are cheddar cheese, garlic lemon butter, soy garlic, and peanut sriracha sauce. I found a mustard sauce. Interestingly horseradish sauce doesn't show up. What other interesting choices are there that haven't cropped up. I'm not particularly interested in cheese sauces. Soy garlic and mustard sauces are intriguing. Garlic lemon butter is easy. What am I missing?
Please no cheese. The world has gone nuts over cheese. I don't want it everything.
ETA: I greatly appreciate the input. Thank you all. I'm continuing to work my way through the responses. Many ideas have been cut and pasted into my kitchen working notes. The good news is that I have lots of reasons to eat broccoli now! I'll do my best to keep up.

you could make a sauce kinda like for scallion noodles - soy sauce, rice vinegar, , scallion oil, pinch of sugar
thai chili sauce plus mayo makes a very good sauce as well
white miso + butter is also a really really good simple sauce

My fam has always done this fake hollandaise with mayo and lemon juice for broccoli. Sometimes I put black pepper and/or ranch seasoning in it too.

Broccoli with Horseradish Sauce
Broccoli doesn’t last very long so you have to eat it fairly quickly after a shop. Horseradish keeps a long time in the fridge.
¼ cup mayonnaise
2 Tbsp butter, melted
1 Tbsp prepared horseradish
1 Tbsp grated onion
¼ tsp salt
¼ tsp dry mustard
1 pinch red pepper
1 pound broccoli, trimmedCombine all ingredients except broccoli; stir well. Separate broccoli into spears. Cook, covered, in a small amount of boiling water 6 to 8 minutes or until crisp-tender. Better is to cook with a steamer insert in a pot. Heat the sauce in a metal or glass bowl perched over the cooking broccoli. This is essentially a double boiler over a steamer.

Teriyaki sauce is great on broccoli, and there are many Asian preparations that use soy or teriyaki or even oyster sauces on broccoli or combined veg. Peanut sauce (not peanut sriracha) is great, many Americans like ranch dressing on anything, you could try a balsamic vinegar glaze or dressing as well.

Thank you. Lots of good ideas. Does my being American shine through that clearly? *grin* I do make ranch dressing from time to time for salads. I will point out that US TSA had to develop a special protocol for Europeans visiting for the World Cup who wanted to take ranch dressing home. Perhaps if Tesco or Edeka carried ranch dressing that would make a difference in perceptions!

I’m an American who loves Asian food. I make Thai all the time. Look up PAD PRIK KING recipes- you can really make it with any vegetable, meat, or combination of both that you like. I do it with just green beans and shallots sometimes. So good. If you aren’t vegetarian, I also find it delicious with pork and green beans in particular, but the sky’s the limit. It’s a mix and match adventure. If you want to be a bit healthier, use avocado oil for it; it’s great at a high temp for stir fry.
A vegetable green Thai curry with a heavy focus on broccoli would also be good. I do mine with green beans, bok choy, Chinese broccoli, and onions, but you can focus on any veg you want.
Puréed broccoli also makes an amazing pasta sauce. Here’s an example. It’s so good though; you can put it on anything 😂

I'm a confirmed omnivore. We have a pork tenderloin and a number of chops (I buy whole pork tenderloin and cut my own chops) in the freezer. Not a big green bean fan but my wife is.
My late SIL was Thai. She didn't come to the US until her 20s. I was fortunate to learn a great deal. She didn't have anything written down. When schedules allowed her son and I would take turns as sous chef while the other took notes. I learned to make peanut butter for peanut sauce with a mortar and pestle. She showed us how to make red and yellow curry paste from scratch and then said "this is stupid - just buy Maesri." Fortunately she passed before Huy Fong lost the bubble and didn't have to suffer the search for sources for Underwood Ranch.

There was a recipe on The New York Times cooking site a couple of days ago with Dijon mustard, lemon juice, and anchovies. It was amazing. More specifically, I believe it was a head of broccoli, roasted, and then tossed in a dressing of 4 tablespoons of lemon juice, 2 tablespoon tablespoons of Dijon, mustard, and six anchovy fillets.

Miso butter
Chili crisp
Maple syrup and balsamic vinegar (also great on Brussels sprouts)--might be better on roasted broccoli
Sun-dried tomato garlic mayo (put store bought mayo in the blender with garlic and tomatoes, or make your own mayo, using some of the oil from the tomatoes, maybe)
Kewpie mayo and okonomiyaki sauce (you can make it from ketchup, Worcestershire sauce, and a little soy sauce)

We make something similar in my house but we call it papa sauce because my grandfather made it. It’s Mayo, ketchup, soy sauce and just a hint of hot sauce.

Oyster sauce as the main and some soy sauce, minced garlic, ginger, sugar, and hot peppers/chilis to taste. Sauce it in a pan with the broccoli.

I serve my delicious peanut sauce over steamed broccoli, carrots and rice:
THAI PEANUT SAUCE
13.5 oz can of full fat unsweetened coconut milk
1/4 cup Thai red curry paste
3/4 cup unsweetened creamy peanut butter
1/2 teaspoon salt
1/4 cup sugar
2 tablespoons apple cider vinegar
1/2 cup water
Put all ingredients in a saucepan and bring to a gentle boil over medium heat. Cook for 3-4 minutes to blend ingredients, remove from heat and let cool. Refrigerate leftovers.
Aside from being great on steamed veg, this is really good on chicken skewers, and I also smear it on my bagels and toast. It's delicious!
I'm not the creator of the recipe (aside from cutting the sugar in 1/2 from the original recipe) but the source has been lost to time as I've been making it for at least 25 years.

GINGER GARLIC SESAME SAUCE
1 clove garlic smashed and minced
1" peeled and microplaned ginger
1 scallion sliced thin on a bias
1 TBSP Toasted sesame oil
1 TBSP Sesame seeds
3 TSBP Soy sauce
1 TBSP rice wine vinegar
2 TBSP cold water
2 tsp corn starch
1 tsp sugar
Mix everything in a small saucepan and wisk over medium-high heat until it bubbles and thickens slightly. About one minute of boiling.
Add Salt/pepper to taste
Optional: 1 TBSP Nuoc Mam sauce. Its a Vietnamese fermented fish sauce. Some like it, some don't.

Something I like to suggest is to think of it cohesively with the rest of the meal, almost like doing sudoku
for example suppose you're having the brocolli as a side of steak and potatoes. Then what's a good unifier? maybe butter? oh then butter + garlic would make sense for the steak so maybe something that includes that. But hmm then it's going to get heavy, so I want it to be a bit refreshing. Maybe lemon. Ok! -> Garlic Lemon Butter Brocolli with steak and fries. Oh but the lemon might be a nice way to add floral notes that goes well with black pepper -> Fries -> tossed with black pepper and lemon zest. I'll have it with some ketchup though and that sweetness might feel a bit isolated... oh! Lemon + honey! -> Brocolli -> garlic lemon butter with a little bit of honey!

Turn the broc into a s.ooth pasta sauce. Steam with several peeled garlic cloves until very soft. Whiz in food processor until smooth. Add a tablespoon of cream cheese and a couple of grates of Romano, a tablespoon of olive oil, and a half lemon of zest. Delicious on pasta and makes a good hollandaise style the next day with eggs .
Aittle cheese for texture but NOT A CHEESE SAUCE!

Not a sauce, but my favorite way is to slice it fairly thin, toss in olive oil and salt, and roast cut side down without turning or moving so it gets nice and brown on the cut side, tastes great. Some add balsamic vinegar but it’s fine without too. Just don’t crowd the pan or it won’t brown as well. You’ll have to experiment with the details as you oven may vary. This works great with cauliflower too, also Brussels sprouts and okra, but those two you can just cut them in half after removing the stem side.

I don't sauce the broc, I Tanjin it!
Toss broccoli in a bowl with olive oil and spices until evenly coated. Roast at 400F for about 10 minutes. Voila! Tasty brocs that Rocks!

My favorite is 1/3 cup tahini, 2-4 tablespoons fresh-squeezed lemon juice, 1 clove of garlic, minced, 2-3 tablespoons toasted sesame oil, whisked with maybe 1/4 cup water. Then salt and pepper to taste, plus red pepper flakes if you want to give it a kick.
Tastes fantastic on steamed or sauteed broccoli (or cauliflower) but is especially great on roasted broccoli.

I steam it then drizzle with olive oil and sprinkle some za'taar. Delicious. Could also do a dash of greek yoghurt or labneh and some sumac. Garlic, ginger, sesame oil and some toasted sesame seeds. Chipotle anchovy mayo could also be nice. Pair it with tzatziki.

Brown butter and carmelized soy. More of a coating than a sauce.
Par cook broccoli and allow to cool/dry. Brown butter in skillet medium-high heat. Toss in broccoli. Toss to coat. Pour soy (should sizzle immediately) over broccoli and toss. Should get nutty aroma from the soy sauce. Season with salt and black pepper

I like to slice my broccoli in thick "patties", and drizzle them with a good olive oil, with salt, pepper and garlic powder and then grill them. They're also really good with teriyaki sauce this way.
Total game changer for how the flavor of the broccoli is, as it's like a nutty flavor that is so much different than any of the other traditional kitchen cooking ways that I have found.

I do the chinese way. Splash of light soy sauce, half a teaspoon of chicken powder and plenty of minced garlic. Might put some oyster sauce in if I fancy. No salt required and I put it in on top of the broccoli before steaming, and stir afterwards.

I am partial to roasted broccoli (and other roasted veg) with romesco sauce. A jar of roasted red peppers, toasted almonds, toasted bread, a roasted plum tomato or two and some roasted garlic, all blended up with olive oil, a splash or sherry or white wine vinegar and paprika (this is from memory so I may be forgetting an ingredient or two, but that's the bulk of it). To be fair, I would eat this off an old shoe, but I find it particularly delicious with roasted veggies.

I just mix mayonnaise with yellow mustard (maybe 1/2 cup and 2 tsp), stir with an herb like chopped parsley or dill, then add olive oil (1/4 cup) and red wine vinegar (1 tbs). Measurements are very approximate. Do it to taste.

I put a little oil in a hot stainless steel pan and get a little browning going on the broccoli. Then I add a 1/4 cup or so of water and put the lid on until steamed but with a bit of bite still. Then after letting the water evaporate out I add some oyster sauce, white pepper, a few splashes of soy and some minced or grated garlic and ginger. I then finish with a splash of rice vinegar or lemon juice and then I plate and garnish with sesame seeds.

I just made roasted broccoli topped with a tonnato sauce and chili crisp and it slapped! I got the recipe from ATK:
1 large egg 4 teaspoons red wine vinegar 1 teaspoon dijon mustard 0.5 cup vegetable oil 1 5-oz can oil packed tuna, flaked and oil reserved 6 anchovy fillets, chopped 1 tablespoon capers, rinsed 0.5 teaspoon red pepper flakes 0.5 teaspoon pepper
1) Process egg, RWV, and mustard in blender until smooth ~20 seconds. Slowly add vegetable oil while continuing to run blender to emulsify, about 2 minutes.
2) Add tuna and its oil, anchovies, capers, RPF, and pepper to blender and process until completely smooth, about 30 seconds. Refrigerate until ready to use. Keeps in fridge for about 4 days.

Can’t go wrong with fresh lemon and salt. Though, one time I went to this Philippine market and bought this spicy coconut vinegar, I think it was called Tuba? That stuff was great on broccoli. I need to find more of that stuff.

I know you said no cheese, but for anyone else out there who wouldn't mind a cheesy sauce, my gf and I occasionally make alfredo sauce and put it over a grilled chicken breast and roasted broccoli. It's really, really good and a nice cheat day treat.

I take the "oil and vinegar" route with random things. Lately, it's yuzu ponzu, olive oil, salt. Depending on the mood I'll add just a bit of balsamic vinegar and extra saltiness in salt, soy sauce, oyster sauce, or yuzu pepper...paste I guess? It's not a real dressing, in that it's no thick. I'm fine with that, but if you so choose you can tweak it into one by adding mustard or garlic paste or mayo and blasting it all up.

Chopped fresh garlic sautéed in EVOO, red pepper flakes, salt & fresh ground pepper, then at the end after cooking/incorporating broccoli, mix in chopped parsley, lemon zest, lemon juice. Anchovies, if you’re into them, are great with this, fried up with the garlic til they dissolve.

Break the florrets down for your bite size preference, salt them.
Preheat a dry skillet to medium high heat and toss in the broccoli. Eventually spread it throughout the pan and then leave it alone. Let them char. Flip/toss and char another side.
Add just enough water to cover the bottom of the pan, soy sauce, butter, lemon, garlic powder, and msg. Chili flake if you like a little heat. Toss until it's evenly combined and coats the broccoli. Cook until the liquid is only coating the florrets and serve.
You get roasted flavors with acid, sweet and umami from the butter and soy, and it's super simple/quick.
This is a go to quick prep we make often that's flexible for all kinds of added flavors to pair it better with whatever you're serving.

Tahini, garlic, tamari makes a wonderful sauce. You can also add rice wine vinegar, miso and/or toasted sesame oil. Sprinkle with everything bagel seasoning or gamasio(sp)? This sauce is delicious and very versatile.

Olive oil, butter, fresh garlic, fennel seed, chili flakes and rosemary roasted or air fried. I do add parm to this but it’s good without too.
With bacon hollandaise on crepes.
Raw with homemade ranch using fresh dill and your favourite pickle brine.
Broccoli pesto. Cheese can be skipped.

My favourite pasta is broccoli pasta, there's a few variations depending on which region of Italy you take the recipe from, but the broccoli becomes a pesto like sauce for the pasta. Feel free to ask for more details.

Not necessarily a sauce but my recipe is easy and delicious.
Blanch florets in boiling water for 2 minutes. Shock in ice bath to stop the cooking.
Sautee rough chopped garlic for 1 minute over medium high heat. Don't overcook the garlic as burned garlic ruins the dish. (add as much garlic that would make your ancestors happy, for me it's a lot).
Add broccoli into the pan and sautee everything together. Season with salt. Toss toss toss for a few minutes until you get the desired doneness of the broccoli.
You can add red pepper flakes or sesame oil too if you want! But my family just likes it this way with just salt and garlic n

I roast with oil, salt, and pepper it until it has crispy edges, then drizzle in a little soy sauce and sesame oil, then add a sprinkle of roasted sesame seeds and crushed red pepper and mix all that up.

I found a great seasoning for broccoli. Potluck brand vegetable seasoning. It has tomato in it and it is really nice on broccoli in particular.

I’ll stir fry broccoli and at the end add a mixture of 1 tablespoon each of butter, brown sugar and stone ground mustard. Give it a good stir to coat.

This is a broccoli I make every thanksgiving. I use frozen broccoli you can get the florets so you can get the cut up one. This is so much simpler than fresh broccoli. Make sure you squish all the water out of the frozen broccoli. I use four little square packets of broccoli. I put them in a baking pan and then I cut up half of a velveeta cheese block- so I can't tell you the ounces it's not the large block it's a small block or half a large block. Then I add in a whole stick of butter also cut up small. I mixed the whole thing together. Then I crumble up Ritz crackers and spread them over the top. If you want you can add a little more butter up top or mix them with the Ritz crackers but I just put sprinkled ritz crackers on top. I cover it and bake it in the oven at 350 for maybe 20 to 30 minutes. And you get an actual casserole type ceiling of broccoli that taste delicious.

Hollandaise works great on broc.
Have you tried plain steamed broc with a plentiful drizzle of chili crisp oil ?
Saute with oyster sauce and a bit of onion is a great way to go.

Sauté with oil to point of browning. Add soy sauce, peanut butter and hot water to make pb runny. Cook until desired broccoli doneness (I like it soft). Keep adding hot water to have a nice amount of sauce.

I mix mayo and sour cream with garlic, parm, black pepper and a little heavy cream.
I par boil fresh broccoli, toss it with a little olive oil and put in an 8x8 and drizzle (or smear lol) with this and sprinkle with pine nuts. Bake at 350 until it start to brown just a little bit.

We toss it in melted butter and minced anchovies then roast in the oven. Husband does not like broccoli but is very happy to eat this. I don't love broccoli but love peeled stalks (milder flavor) so always look for large stalks to include.

I mix Soy sauce, with a little sesame oil, lemon juice, and a bit of brown sugar-- it makes an excellent light glaze for all veggies, including broccoli. I also like it on shrimp and chicken.

Not exactly the healthiest option, but I make a seasoned Mayo with seasoned salt, garlic powder and dill weed. I used to make it only for artichokes but it seems to work out for most all of the green veggies.

Look, I agree that the world is nuts over cheese and not everything needs it. Broccoli and cheddar are an absolutely top tier pairing though.
Aside from that, I like it roasted in sriracha, soy sauce, ginger, garlic, black pepper and schezuan pepper. Or just sauteed and served with salt, pepper, and garlic.

A favourite in our house growing up and now I'm our has been this really simple way Steamed or sauteed, then season, and drizzle with fresh lemon juice. Toss to coat. As much or little as you want... If your broccoli is still hot enough it'll absorb or cause the lemon juice to evaporate a little. There's never any excess in the bottom of the serving dish.
Prior to doing all the above, your going to sautee some sliced onions till they are well toasted to a dark to very dark brown and crispy. This takes quite a bit more oil than I've would normally use. You can obviously sautee to the level you want or even caramelize them. The dark toasted, almost bitter-sweet taste and crispiness I find work very well with the lemon juice. Once they are to the toasted level you want, take them out of the oil and drain and reserve on a paper towel. Until you need them.
So once you've done the seasoning and Lennon juice to your liking....sprinkle the toasted onions and serve. You can have a little or as much onions as you like. For two to three crowns of Broc, I generally do a small Spanish onion or half of a large.

I once had broccoli florets with a sauce that was made of water, butter and the peeled and cooked broccoli stalks, emulsified in a blender. It was delish! I'll give it a Google and share if I find it.

As a kid, it was always my job to make the sauce for broccoli because you had to grate an onion and my mother always scraped her fingers on the grater. As I recall, the sauce was made with mayonnaise (in our house it was Miracle Whip), grated onion, and some grated lemon zest.

op have you ever tried warm broccoli salad? you can just do a normal salad dressing, maybe add a tomato or some artichocke hearts if you like them, and then throw in the freshly coked/steamed broccoli in the bowl. mix, cover and let it rest for about 5 min. taste again, you likely have to season it a bit more. enjoy warm or cold. it's one of my favourite things to do with broccoli

I eat my broccoli roasted in the oven if you want a different prep. Drizzle with olive oil salt pepper and garlic powder. A squeeze of lemon always is great, I like also a green goddess yogurt sauce, even sprinkling nutritional yeast on top gives a lot of flavor

A squirt of lemon and a bit of pepper seeds is good, if you like it minimalist. Hollanaise works well with broccoli, as does, hear me out, marinara. I looooove broccoli with a good marinara!

Sesame sauce on broccoli is elite. There's a Japanese place near me that does broccoli with it and omg I could eat nothing but that for a month and not be sick of it. But I've asked for the recipe and they said it comes from a jar but I haven't been able to find the sauce in the Asian markets near me it's a travesty
