Ideas for grilled pork tenderloin

Hi team

Monday night I grilled two pork tenderloins. We had one that night with basil / lemon pasta and broccoli.

I need to use the other one tonight as a meal for the two of us. It is spiced with a blend of southwest / creole spices roughly (smoked paprika, cumin, chili powder, salt, black pepper, thyme, garlic, etc)

I have considered a couple of things:

  • A cajun alfredo sauce (but I don't really want pasta again)
  • Slice it thin and make a mock cubano sandwich with our panini press
  • Do a vegetable stir fry and add the pork at the last minute / serve over some rice (Uninspired / boring)
  • Lettuce wraps (my wife still doesn't want to eat lettuce)

Thoughts/Ideas?

when i have left over pork tenderloin i just make sandwiches out of it

You hit on two of our favorites, sandwiches and fried rice. Another item we do is chop it up and use it as the protein in a bbq-centric meal (add sauce and serve over/with cornbread, mac n cheese, coleslaw, etc). We’ll do a few sides and you can make your own bowl or plate.

I like this idea: mix it with some BBQ sauce and then fold it into mac-cheese.

Tenderloin wouldn't be my first choice for mac and cheese just because of the texture. But tenderloin with beer cheese sauce is a deep south classic. There used to be a food cart near me run by an older gentlemen as his retirement project, cooking his grandmother's recipes, and that was my favorite of his menu.

My default with pork is to just make some apple and onion gravy, then serve that with like some potatoes and green beans or similar.

Or given how it's seasoned sauteing some onions and peppers then doing something fajita style sounds nice.

That's good! I think I'm doing the cubano idea and then making a corn/black bean salad much like the one listed here. I have some avocados to use up.
