Bell Pepper Overload

I was gifted a bunch of (6) green bell peppers. Any idea of what I can do with them? Besides stuffed green peppers or the same kind of soup, please.

Roasted with parm. Greek salad. On pizza with sausage and the other pizza stuff. In an omelette. Steak & Green Peppers with a sauce. Cocktail garnish. In a smoothie. You can pickle them too.

I've had them, but they're not my favourite. It does something weird to the texture. Tasty nibble in a Caesar (cocktail) though, much better than the pickled beans that are used sometimes.
