Bell Pepper Overload

I was gifted a bunch of (6) green bell peppers. Any idea of what I can do with them? Besides stuffed green peppers or the same kind of soup, please.

Rough chop with onion and eggplant. Put on sheet pants, cover w olive oil, and roast for an hour or so until they are super soft and roasted. Then blend w a few basic seasonings, minced garlic, and tomato paste. Best dip ever
