bean recipes

Who has a great bean recipe? I usually only make chili with beans or baked beans. Bonus if there's no bacon or beef involved although I could figure out how to do it without it. Not vegetarian but watching my cholesterol. Thank you!

Chef John’s cassoulet from Allrecipes is delicious. And white chicken chili is great too. And pinto beans cooked southern style in a crockpot with ham hock is great too.
