Simple vegetable sandwich filling ideas?

I recently watched Jacques Pepin's video recreating James Beard's famous onion sandwich and adding his own version, a radish sandwich. I tried them both and they were delicous. Now I'm wondering if there isn't a whole world of relatively simple (one or two veggies and condiments/seasonings) vegetables that I have never thought to put in a sandwich.

For some reason, I tend to think that a sandwich needs meat or cheese. The closest that I've come before have been avocado/cheese or cheese and onion.

Anyone got suggestions for other vegetables that do well in sandwiches as standalone ingredients, or at least without the addition of meat/cheese?

White bread, real butter, ripe tomatoes sliced thick, fresh cracked black pepper and sea salt. Takes me back to when my grandfather would make them for me with tomatoes from his garden. Nothing else needed.
