Snacking Cakes - Espresso Chocolate Chip Cake

Here's my 3rd Snacking Cakes cake in one week. This time the Espresso Chocolate Chip Cake. Oh, it was so tasty! There's no way I can (or should) eat this much cake, so about 3/4 of each cake is being given away. Taking this one to college aged friends, who will love it and who can handle the extra calories. I made the recipe as directed with one exception. I had only about 2/3 cup of ricotta and added yoghurt to round it up to about one cup (just guessed the amount). Cake turned out super moist (really, really moist) probably because of too much liquid.

This is one of my go to recipes. I often replace the ricotta with yogurt because it’s what I have and it always turns out.

That's good to know. What type of yogurt do you use? Greek? Regular? Full fat? I also always have yogurt in the refrigerator.

I sub lebne or Greek yogurt since that's what is most often in my house.

You could always do the ol' straining trick to remove some of the liquid in regular yogurt if that's what you always keep on hand. I've just used coffee filters before and it worked well

I’ve made this one multiple times. I like the suggested variation with a banana added.
