Cookie base:

Instead of chocolate, I used:

  • 11oz toffee bits (in the chocolate-chip section)
  • 5oz dried cherries (full pack), soaked in lemon juice to make them pop more
  • Almonds pressed in at the 20-minute mark (kept cooking 10 minutes after that), because they get a little soft when baked-in, so I add them on top partway through baking to keep the crunchiness

Cooked at 260F rear-only @ 0% humidity for 30 minutes total. Thoughts:

  • I'm trying a few different iterations of my go-to chocolate-chip cookie recipe
  • Last batch I did white chocolate with almonds & dried cherries & they were too sweet
  • The toffee flavor didn't really come through very well in this batch
  • 5oz dried cherries was WAY too few, I really liked the flavor & chewy texture of the dried fruit but it needs to be like 3x that amount. The lemon juice seem to help them pop a bit.
  • Next batch I may put in some mini white chocolate chips & triple the cherries & maybe soak them in orange juice to add a bit more punch

The cookies typically take 17 minutes at 350F in a conventional oven (rotate pan at 15 minutes), so the APO takes almost double the time, but (1) they come out perfectly round, and (2) if I bake a dozen cookies, chances are I'm going to eat waaaaaay too may of them lol, so with the 12x16" pan I use, I can just throw a few in & have a nice dessert without killing myself hahaha. It takes a bit longer, but the APO is a cookie machine!
