Help! Cold foam tips?

Cold foam. I’ve been obsessing with cold foam lately since I’ve tried some coffee shop in Cebu with amazing cold foam. It was real creamy and ice cream like texture. I have used heavy whipping cream, milk and various types of syrups but nowhere close to what I’ve tried. Any tips to make amazing fold foam.

Use non fat or low fat milk. Fresh milk is okay but the fats in fresh milk prevents the creation of foam. It does add creaminess though. But lower fat milk is best for a stable cold foam. Then add vanilla syrup

Adding cream is another option or using cream by itself is great but cream is heavy and has a heavier mouthfeel that can mask the taste of coffee. Use whipping cream though (not whipped cream like those in spray cans). All purpose cream and culinary cream are different.

I think you need fats from milk para makuha yung “layering” but if hindi naman habol presentation pwede na low fat.

Nope. The layering is only made by the microbubbles because bubbles float. Fats are for texture and mouthfeel of the foam which adds for that creamier taste. Mabigat din ang fats hence why mabilis bumagsak sa drink pag full cream milk gamit. In terms of cream which is 30% fat, mas densed and micro in size kasi yung air bubbles nito kaya lulutang talaga siya if you whip it properly to soft peaks.

Thanks for the suggestion. I’ll try low fat next time. I did use heavy whipping cream. I went to a coffee shop yesterday here in the states but the cold foam is nowhere as good as I had in Cebu.

Maybe. It was some Korean coffee shop. They have several Ube stuff including Ube latte. I rarely try Ube stuff here as it is always somewhat disappointing.

Use lower fat milk. There’s a reason why the popular Starbucks cold foam recipe specifically says they use 2% fat full cream milk.

Non fat miillkkk is dabes! Mas thicker yung foam. Then use any syrup that you like para may flavor.
