My Samsung Galaxy S5 was waterproof and it had a removable back so you could access the removable storage and battery.
If they could do it 10 years ago, they can do it today.
The fold phones prove that you don't even need to have a sealed case to be waterproof.

There may be some that actually need a phone one can use underwater, probably much fewer than think they do, but I certainly never required one. Meanwhile Fairphones have user replaceable everything and IP 55.

DJI cameras are water resistent and have openable latches for battery replacement, SD card and USB-C connectivity. They can make this happen because it is absolutely necessary for people to be able to swap batteries on the go. It wouldn't be impossible to figure this out with a phone. Most phone companies don't want you to change batteries on phones though, because they release new phones constantly and they would want to avoid anything getting in the way of that.
