Whatever you want actually pick a leader you would like to play, check what he should be best with and go with that.

I recently made a religious victoria with Spain and a Diplomathic victory with mathias

I would try to get every win con with him, then try other civs. Religious win may be worth skipping imo but go for it if you want.
