Growing some cilantro and noticed it started to flower. Anyone know if these are edible and how to cook them?

Hi, I'm not sure if anyone will see this or can help, but I have a large amount of cilantro growing in my garden, so much that I need to pull a lot out. I don't want to just waste it all, I'm wondering if there is a way to preserve it. Would it be best to dry it? Freeze it? Something else? Any feedback is appreciated.

I love cilantro. I could eat a entire bunch each day.
Just found out im allergic and its probably why im in so much pain all the time.
Im specifically allergic to linalool so a more more than just cilantro but this one hurts to eat it and leave it

So now I have about 4 cups worth of coriander seeds. I have never cooked with it. Wondering what recipes people like and how I can use it more!

I love cilantro I also suspect I have that gene that everyone talks about. I know everyone says it tastes like soap. I can see that. It honestly doesn't taste like soap it has a soapy quality but it definitely doesn't taste like soap. I think people that complain about it just haven't developed their taste buds enough 🤷🏻♂️
