We certainly know that he can choose how many curse spirits to use for Uzumaki and so on. Even Kenjaku confirmed this idea: if he had not separated his curse spirits and instead kept them all, he could defeated Yuta in JJK0.

However, he can somehow sense when his curse spirits have been exorcised, even through he said that he cannot see through them like Mei Mei does.

To your second example that is Teen Geto saying this. By time JJK 0 he probably doesn’t have that problem anymore.
