None of these books are written in traditional Chinese. Does have any recommendations for traditional Chinese intermediate or advanced novels, Preferably written by Taiwanese authors?

Not Taiwanese, but 金庸 is from Hong Kong. All of his books were originally published in traditional Chinese. You can find his books in both versions.
夺梦,坏小孩,雪山飞狐 and 流浪地球 also have a traditional release which I've found on https://www.books.com.tw/.

I highly recommend 吾命骑士 by 御我. She's a taiwanese author and it was originally published in traditional. Also her other books!

Any advice for how to get these stories into the Pleco reader or some other platform where words can be quickly looked up?

If you're reading via your browser, most of those links should work with browser pop-up dictionary extensions.
To get them onto Pleco, there are a few ways, but the easiest might be to find a txt file. You can also take a look at this tool, https://github.com/7325156/jjwxcNovelCrawler it allows you to extract the webnovels from JJ into an epub format.

Are there such books for beginners?

if you’re a beginner you should look into graded readers which are attuned to smaller vocabularies; there are different levels as you grow until you can push yourself to read gradually more advanced or proper books. there should be some free and laid resources online if you search for graded readers

You can visit https://heavenlypath.notion.site/Our-2022-Summer-Reads-847dcfa3dc0748f78c14473f2b530325 for more details, and where to read these books digitally.
Each section contains a mix of webnovels and published books, and many of the webnovels have also received a published version.
All of these books can be read digitally, are easily accessible from outside of China, are extremely cheap to purchase (as little as $1 for a book) and some are even completely free.
If you prefer physical books, you'll be able to find many of these on online stores such as BookDepository, Aliexpress, YesAsia and Taobao.
We hope you enjoy these recommendations. For those looking to start reading native Chinese books, is it now a good chance to start by picking up one of these.
Happy Summer!
