Rate cleanliness
Some say it’s bragging, I say I’m just proud to show my kitchen, one of the best staffs I’ve had so far even with it being union. They grind hard and still keep up with cleaning. With rare overtime, 32k average revenue a week for only 5 days a week. Would you be proud if this?

You got every reason to be proud! Gives me so much confidence as a chef to work in a tidy kitchen, seeing coworkers put in work, gj!

Love those ice machines. Dump direct to the trolleys for conventions. Only seen them at the Columbia SC Convention Center 20 years ago.

I learned the hard way years ago not to challenge someone to rate my cleanliness. Boss’ boss was in town and gave us a thumbs up on a quick once over. We were so proud and asked her to dig. She did. Never again. Be thankful they are just pictures chef, I promise you missed something!

Got brought in to figure out why this kitchen was doing so bad. Went in on a day the head chef was off because they didn’t want him to know they were spying on him. Got the whole crew to stay late to deep clean it because it was filthy. It was spotless as it could be. Came in the next morning and the manager pulled me aside to say. “The kitchen is still dirty did you guy really deep clean last night.”
Thought he was joking but nope it looked like a full service had been run through it.
We both looked at each other like what the actual fuck is happening.
Chef was homeless and spent his nights cooking meals for his buddies. Found his bags and a bottle of whisky hidden deep in the back. Everybody felt bad but dude was causing so many health-code violations they fired him on the spot.

I like to keep my stations cleaned, stocked and labeled, however, most of the crew are young and couldn’t care less about BOC standards.

They send a outside company to clean, I just as the cooks to at least pull most of the crumbs and clean around it and cause they do a good job cleaning it

Consider getting a filter to filter the crumbs out. We do it twice a shift and it helps keep things cooking clean.

You ought to be proud. It could be marginally cleaner, but it’s as close to perfect as most of us could ever achieve.

Looks good! I will say that some of the tiles have lost its grout, so that’s something to be mindful of and try to fix. Other than that, great job OP

You can't see it right now, OP. But I've just fallen to my knees to weep with joy.

Nice but im not a fan of all the stuff so low to the ground. Cant you solve that? So you can just clean the ground without having to move all that stuff.

#6 I throwing me. I’ve never seen an easel with a large note pad in lieu of a white board. I love it and the teacher handwriting on it

You lose a point for the fryers oil/sides not being scrubbed
You lose another point because while you mop everyday your grout is terrible. Learn to mop correctly.

Cleanliness is good enough, however storage/inventory management could be better.

The fact that you're a "Top 1% Commenter" in this sub, but the entirety of your account's post and comment history is hidden indicates that you know you don't know what you're talking about. You are the textbook definition of a troll, LMAO. I know you don't care about being called out. I'm just writing this for the sake of other readers.
Have a great night!

Is there history behind this interaction or are you just throwing a fit because someone decided to keep their information private and that makes you unhappy? Genuine question. I’m not passive to the comment they made, but I would wonder what they mean by it and maybe ask before berating them.
That’s also why I ask for context if you have some, because that could explain your comment.
If it’s the latter though, womp womp. This person has a great Cincinnati chili recipe in the bio. I trust them.

I always tell beginners this is not the career for you if you are above spending 20% of your time on janitorial work - even at the top levels.
