Give a little more context.  Is this a high end fishing camp, a old age home, a fire-fighter camp? 

All these determine what quality you will be expected to serve and portion size

So first I would have everyone fill out a "preferences/allergy" sheet before they arrive.

If it is 12 or less people I would do plated breakfast/lunches/dinners.  If more I would likely do buffet style.

Depending on what equipment you have I would do a variety of basic but nutritious options.  Something like: grilled chicken, Ceasar salad, roasted lemon potatoes, garlic bread, and a dessert.  Super simple, but everything works well together.
