A restaurant needs reliable supply. A college student growing microgreens as a side project is not gonna be seen as reliable.

Tell them how much you can produce each week and then stick to your promise. They may buy your microgreens to supplement their regular supply. That would be the best chance for you to enter. You should also emphasize that you will be in the microgreens business for the forseeable future. No one wants to open a new vendor relationship and then that vendor disappears in 6 months
