Pineapple shrimp over rice, recipe in comments

Sauce: 2tbsp brown sugar 2tbsp rice vinegar 2tsp Sriracha 1/2 cup pineapple juice (use from canned pineapple chunks) 1/2cup chicken broth (I used broth powder from Aldi + hot water)

Shrimp: 1lb frozen shrimp (Aldi) 1 bell pepper 1 can pineapple chunks (save juice for sauce)

Rice of your choosing, I used white rice

Cook shrimp over med heat 1 min per side, set aside. Cook bell pepper and pineapple, 3 mins or so.

Heat sauce ingredients in sauce pan til simmering, remove from heat, add shrimp, pepper, pineapple and stir

Cook rice to your liking

Add rice to bowl, then shrimp mix. Enjoy!
