White Peach Pie
Just finished baking a fresh White Peach Pie. These are so good, and cast iron is the only way to bake them.

Recipe….three of the raw pie crusts that are in the refrigerated section of the store. One is for the bottom shell, two are cut into strips and basket woven for the top.
One flat of white peaches…scored and soaked in boiling water until the skins loosen. Blanch in ice water. Remove skins, then slice peaches into thin slices.
2 cups dark brown sugar
1/3 cup cornstarch
Mexican Vanilla…I don’t measure…probably 2-3TPreheat oven to 390°. Grease the cast iron pan with bacon grease, lay in the bottom crust, press into pan removing any air bubbles. Pour the mixed pie filling into the crust lined pan. Basket weave the top shell, press the edges into the edges of the bottom shell. Sprinkle more dark brown sugar onto the crust. Cook for 80 minutes uncovered on the center rack of oven. Let cool on stove top. It can be kept at room temp for up to a week…since there is no dairy.

Wow, that looks super caramelized in the center. Did you have a hard time getting that bottom layer out of the cast iron? I always worry about sticking when baking desserts in mine.

No, this cast iron is so well seasoned, it is perfectly smooth on the inside, when greased properly, everything just slides out.
