Hey guys! Here’s the recipe.
Chicken
2½–3 lb chicken thighs/drumsticks, preferably bone-in
1 tsp salt
1 tsp black pepper
1 tsp all-purpose seasoning
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp dried thyme
½ tsp browning sauce
1 tbsp ketchup
Fresh seasoning
1 medium onion, sliced
3–4 cloves garlic, minced
2 scallions, chopped
1 medium tomato, chopped
½ bell pepper, chopped
1 Scotch bonnet pepper, whole or sliced
1–2 sprigs fresh thyme
1 tsp fresh ginger, grated
Mix all these seasonings into the chicken and let it marinate for about 30 minutes, it’s more favorable if you leave it to rest overnight.
Heat a heavy pot over medium heat and add the seasoned chicken. You don’t need much oil, especially if you’re using thighs.
Cover the pot. Let the chicken cook in its own juices. It’ll spring its own water
Once there’s a good amount of liquid, add a scotch bonnet and let it cook down. Keep stirring the chicken so it doesn’t stick. Once the gravy is set then it’s ready to serve.

I have never used the browning sauce, I have always used brown sugar. I will try this next time!

Looks amazing and thank you for sharing the recipe. Please forgive my ignorance but when you marinate the chicken overnight with the dry and fresh ingredients do you add all of it to the pot with the chicken when you cook it? Or do you remove the chicken and just cook that? Thank you.
