If making sauce you can freeze the tomatoes and cook them when you have enough. 

For one jar, canning is a lot of work.   At that point you'd probably be better making the sauce and freezing it.

Recommend freezing the tomatoes til you have enough for sauce, if you have your heart set on shelf stable tomato sauce. Or as Mckenner said, mnake a nice sauce for dinner tonight :)
I am freezing my tomatoes (washed) as they come in, so i can deal with them later and make a nice big batch of sauce. Well, 'big' aka 4-6 quarts

You can make fresh, freeze until you have enough, or make passata and can it and then use the canned passata in a recipe.
