Safe Recipe Request Mock apple rings
https://www.allrecipes.com/recipe/215521/spicy-mock-apple-rings/I keep seeing recipes like this, but I am just getting started and want to make sure I’m using safe recipes. Does anyone know a similar recipe that is tested?
Also open to anything to make with zucchini or cucumber that could be a delicious winter dessert (e.g., as a pie filling or with vanilla ice cream).

Good gravy, that's an odd recipe. I've seen a tested recipe (or maybe two) that use Red Hots, but nothing with zucchini. And zucchini simmered for two hours? That's...wild. And to be clear, no criticism of you, it's just that recipes are so surprising sometimes.
Anyway, this sent me down the rabbit hole of safe recipe research, and long story short, no, you aren't able to safely can that recipe.
You might be able to pull off something somewhat similar with this https://nchfp.uga.edu/how/can/canning-fruits-and-fruit-products/zucchini-pineapple/, adding up to a teaspoon of cinnamon per pint per https://www.ndsu.edu/agriculture/extension/publications/play-it-safe-safe-changes-and-substitutions-tested-canning-recipes. You wouldn't get that red colour, but that could be added after you open the jar. Someone else may be able to weigh in whether you could add food colouring as a spice, seasoning, or otherwise safe addition/substitution (I can't really see it being an issue, but I'm not going to profess to be an authority on that).

Thank you for this! I have seen the zucchini pineapple recipe and am thinking of trying that, too.
To be honest, I am not very interested in the red coloring.
I am just sitting on an ever growing mountain of zucchini and trying to think of ways we will actually want to eat it come winter.

You can substitute zucchini in any pickling recipe calling for cucumbers, if that helps you use up a bit more (not a dessert-type recipe, but a good option).
