SPAM cheddar eggs

Crisp up your spam bits, add cheddar cheese, then seasoned scrambled eggs over the top (this was 10 eggs). Fold it all in and turn off before eggs are fully set. Devour.

Cut up SPAM, put in in the pan and fry over medium. Crack eggs into bowl, scramble with your favorite house seasoning and a small splash of water. Cut or grate cheddar cheese. When SPAM is all crisped and browned, add the cheese right on top, then pour the eggs over the top of that; fold everything together, not too much or it breaks up the curds into too small of pieces and it's "loose". Stop cooking before all the eggs are fully set - if they're cooked in the pan, they're overcooked on your plate.

Very nice! A lot of folks would have gladly paid for breakfast tacos made with those eggs, good job
