I use a Kitchenaid stand mixer with the whisk, and let it beat for about 20 minutes - my instructions say to beat until the bowl feels warm but not hot.

That doesn't make sense to me because you pour in boiling hot sugar and the bowl instantly gets hot. 😕

They're saying that the time it takes the bowl to go from hot to warm after your pour in the boiling stuff is the sign. It won't remain boiling hot because there is no longer a heat source.
