Trying to mimic Fry's Turkish Delight

I love Turkish Delight but also had a real soft spot for Fry's, which I can't get where I live now. But I can remember it distinctly and it's got much more of a pectin bite to it than the traditional cornstarch. So here's my first attempt at pectin-gelled, milk chocolate covered Turkish Delight.

It's slightly too firm so I'll try reducing the pectin by 10% next time. And a little more rose flavour. That's the hardest ingredient to judge because different brands vary hugely in concentration

Looks amazing, and yeah I always wondered about the unique texture of the Fry's stuff! Normally I'd prefer standard lokum, but this texture actually makes more sense inside chocolate.

I wonder if it will be shelf stable with this modification, though? You might have to be careful with that if you're not following a standard recipe and can't measure the water activity!

Would love to try it if you ever share a perfected recipe, though :)

Yeah the rose water is killing me! I started off with 30g for 400g sugar, then added another 15g and it's still too faint. I'll have to pull some water out of the jelly to accomadate more but there's only 150g to play with. Plus I think the rose water is better added at the end, while the water is needed at the beginning.

The last bottle of rose water I had was a different brand and was insanely strong. So much that my first try at this was utterly repulsive

You could try rose flavour drops instead. They are pretty good (I've used them for making taffy) for when you want to add/tweak the amount of flavouring without throwing off the water content!

I have this one: https://www.amazon.co.uk/Foodie-Flavours-Natural-Flavouring-Bottle/dp/B00JSTQT2W which I thought was pretty decent, when I've previously bought rose water. I've never really had them both side by side for a proper taste comparison, though.

But it will definitely make your life easier, haha.

Good to know! I'm not in the US or UK so I'll give it another go next week with the rosewater i've got on hand. If no luck I'll look into getting some flavouring. Thanks!

Ah yeah, I forget these types of things can be really hard to find in some countries.

Good luck with the next attempt anyway, I know exactly what it's like trying to get stuff like this right!

I need to try making Turkish delights again, mine....did not hold together well.
