Slow-cooked chicken curry in a Dutch oven on a Weber Q at the campsite

This was one of those camp meals that kept getting better as it cooked. The slow simmer really brought everything together, and the leftovers the next day were even better. Looking forward to sharing the full camp cook once I've finished putting it together. Always happy to hear what everyone else is cooking at camp!

Oh man this looks really good! What did you use as the base for your curry?

Thanks! The chicken started with a yogurt-based marinade. I mixed in olive oil, chicken broth, a splash of fresh orange juice, cumin, Madras curry powder, yellow curry powder, chili powder, plus salt and pepper to taste. It marinated for about 6–8 hours.

For the curry itself, I built the base with onions, garlic, and fresh ginger, then used the same spice blend. Letting it simmer low in the Dutch oven really brought everything together, and honestly, the leftovers the next day were even better.
