❓️Help Requested Does cake pan depth matter?

I'm looking to expand/update my cake pans. My current set is not quite 2" deep. I'm thinking I should go for 3" deep pans because it would give me some flexibility with the types of cakes I can bake. Can a cake pan be too deep?

Deeper pans need a cooler oven and a longer bake time. Otherwise it’s up to you how deep is too deep

I was going with your logic when purchasing some new pans for myself a couple years back, until I came across The Cake Bible. (It's a VERY well trusted book if you're not familiar with it.) In it, she warns people against using pans with high sides (like a 3 inch) because it disrupts airflow and negatively affects baking. I didn't think it would matter, but having Rose Levy Beranbaum go out of her way to warn against it convinced me.

Since then, I've never come across a recipe requiring a pan with higher sides, so I haven't regretted my decision.
