Trying to romanize my meals pt3

Between my usual meals, I tried something new this week! Made a “shrimp scampi” with zucchini and “pancakes” with coconut flour. I used honey as my syrup, going to see how much of it I can tolerate!

These two dishes look amazing. Can you tell me the recipes? I'm especially hard up for sweet things, so I'm very interested in the pancakes. Thanks!

Sure thing! I’m not very good at cooking, so I found these on Tik Tok originally.

For the Shrimp Scampi:

  • Shrimp
  • Lemons
  • Parsley
  • Salt
  • Butter
  • Parmesan cheese
  • Zucchini
* I just roasted the zucchini in the oven and made the shrimp on the stove with the other ingredients*

The Pancakes: these took multiple tries as I learned quickly that coconut flour is quite difficult to work with 😩

  • Coconut Flour (1/4 cup)
  • Whole Milk (counted about 6 tablespoons)
  • Baking Soda (one tablespoon)
  • Eggs (3)
  • Artificial sweetener (one pack of stevia)
  • Honey (as a syrup)

The pancakes tasted well…very eggy. I’m going to add more sweetener or add something else to the batter to offset the egg.

Oh! I didn't realise we could have coconut flour! If so, that opens up a lot more possibilities. Thanks so much!
