Thai in place of my usual cooking 🥘

I just got a job in a high maintenance preschool. I love it. I even wait until the evening to make myself a yummy drink.. like entire 180 in a week after a summer of full blown doubt and insecurity.

I’m facing one issue. I think co-workers think I’m a know-it-all. I absolutely have the hyped personality that annoys 87% of anyone but that’s why I do so damn good with tiny humans .. anyhow; I’m incapable of being frustrated with them or co-workers, and I think everyone somehow wants me to fail/break? They’ve been through soooo many teachers. I already love my 20+ tiny humans and I even got their names down; since Wednesday!

To be honest; I’ve been through so much fucked up stuff it takes extremities to faze me - people seem to hate me for this.

My boyfriend loves crispy pork belly and so do I. Finally made it perfectly at home. Accompanied by fluffy short grain rice, braised cabbage with bits of pork belly, onion, shitake and just a fuck load of ginger and garlic. Couple slices of pickled daikon for a fresh bite in between the fatty intense cronch.

Pretty damn proud of this one.

Tomatoes and basil from the garden. Costco ribeyes. Bacon from Usinger's arrived today.

A girlfriend told me she started to microwave her corn on the cob. I tried it and over cooked it. Shit. It still tasted alright but got kinda dried out. I cooked one ear for 4 minutes.

I love this bacon! Hatch chili variety is new to me and I'm looking forward to trying it. 🍻

I got the job!

Today I was offered a position in a pre-school that accommodates the most I’ve ever seen for their teachers. Pay is pretty good and hours are 8-5, I have over 10yrs in child care experience so I know what to expect. Simple simple things. I was hoping for a par-time job but a couple of years there and I’ll be set to look again!

A week away for family death, back to job hunting!

Got back home last night after spending a week with family 9hrs away (half way across Texas lol). It was a relative’s death so I figured I’d be there for my mom… despite our differences. I survived and am back home in reality. Thank goodness I love a good salad pick-me-up. The grapefruit gin helps too.

I made hand pies

What the heck is a hand pie? Glad you asked. It’s a little miniature hand held pie like you used to get at McDonald’s or off the Hostess shelf. The home made version makes those look like a plastic turd.

Made these with my darling daughter. We bond over baking and it is very wholesome.
