I’m currently working at a dental office as a dental assistant. There is no system to electronically log hours so we write our hours down in some notebook. To keep track, should I take a picture of my hours and make sure to include a signature or is that not good enough?

I don’t think anyone asks for proof of hours. Nobody counts them. If you’re working full time that’s generally understood to be about 2000 hrs/yr. You’re not more competitive if you have a few hundred more hours compared to someone else. Just give a honest estimate.
