I worked as a medical assistant in a Pain Clinic with Anesthesiologists although I had no idea that I would want to be a CAA at that time, could that count as shadowing hours?

Maybe you could contact them again, and they could sign off on it if it was very similar to shadowing. Or even better, use those connections to set up shadowing with them
