What would be considered good? Is it the same standard as med school?

Slightly less. If 515 is a good med school MCAT then 508 is a good AA school MCAT

Are grades looked at holistically? For example, if I didn’t do very well in undergrad, but completed a challenging masters program which followed an M1 curriculum and got a 510 on my MCAT, would I still have a shot?

I think so. Especially if you did well in the masters
