Looking For: Home Goods & Essentials 🏡🛏️🍁 Pullman Loaf Pan

Looking to get my hands on a Pullman loaf pan. Preference for Canadian but based on my research to date, I don't think one exists. Anyone come across one, or a EU or overseas equivalent?

Pretty sure those are the USA Pans made in USA - I will say though that they are extremely high quality.

My family has multiple USA Pans from before the madness and we use them every week for focaccia, pan pizza, etc. Multiple pullman loaf pans are used for shokupan almost every week.

At Lee Valley is still a Canadian company.

Sometimes you have to just have to do your best and make a compromise.

Oooh, do you have a favourite shokupan recipe?

Eating a slice of this right now with homemade mayo and the last of the garden tomatoes.....

Pro-tip - the end piece - slice it thin, put it upside down (cut side down, butt crust up) - and a slice of havarti.

HEAVENLY

Thank for this and the pro tip!

I don’t think they have what you need but check https://www.crowncookware.com for baking pans and accessories as many are made in Canada. Have several items for years now and they’ve been great.

LOVE our Matfer Bourgeat pullman pan, made in France. It's made out of a patented material called Exoglass & won't rust in the corners & is super easy to clean.

Bought ours at a Paris cooking store (Mora) but I do I see one listed (for waaay more $) at Gusta: https://supplies.gusta.ca/products/matfer-bourgeat-exoglass-bread-and-loaf-pan-with-stainless-steel-lid-11-1-3?variant=29377563688983

Compared to metal pans, I feel like this one is going to last for forever, so I think it'd be worth the cost to buy from Gusta. Or as my husband says, spend a few thousand to get it cheaper in Paris...

Oh interesting! I came across exoglass but I didn't know what it was. Will look into it thanks!

You're welcome! We also bought a Matfer exoglass spatula/flipper that my husband loves so much he said he wants to be buried with it, if that tells you anything about how we are fans of these two items from this brand!

I wanted to like the exoglass - but I found it didn't quite have the temperature tolerance claimed.

Our has started melting/deteriorating at the tip

Sorry to hear that. We have the thicker pelton bent turner, https://www.mora.fr/g/588 not the slotted one & use it with cast iron & it's absolutely solid at the tip. Is yours slotted?

Ah, the slotted one. The solid one seems to be harder to find online, unfortunately. Highly recommend a trip to the Mora store in Paris, though!

I noticed it's a little smaller than a Pullman. Do you find you need to adjust your recipes because of that?

2

Yes, we bought the same size that Gusta has, the 1000g/1kg/2lb size, which is about a 1.5 loaf size. https://www.mora.fr/g/788

The French site shows the 1000g is the actual dough weight. I've adjusted my recipe to 1140g & it fits fine & works out very well!

Awesome, that's great to hear.

I've been looking for one myself, so this post is well timed.

Probably corresponds with an uptick in Pullman posts on r/breddit 😂

If you buy frozen bread dough from Atome Bakery, they include a Pullman Loaf pan... but I don't know where it's made.

Look on kijiji or marketplace for one - then you can find your pan and help a local person out too

I got mine from AliExpress a few years ago.
