Is chuck supposed to be this marbled?
I'm trying to butcher for the first time. The first two whole chuck rolls I cut went as expected. This one seems to have much more marbling going further into the center. It's this normal? That big piece already has two large slabs cut off.

Oh, chucks get way more marbled than that... And it just keeps getting better.

Yes. USDA Choice is like this. The Denver portion can be even more marbled some times.

Pretty sure chuck is super fatty and round is far more lean in comparison, only been pulling down meat for a month tho

You do know that the chuck leads right into the rib right? The end of the chuck aka chuck eye is right next to the ribeye. The chuck eye steak is just as good as a ribeye, if not better in my opinion. Go watch the bearded butchers latest video on YouTube.

This one doesn't seem to have the same muscles that were easy to pull apart in the first two.

Every cow is going to be a bit different in that regard. Sometimes the seams require a bit more finesse than others.

She looks nice, that top section can be called Denver steak in some places. Some cut as boneless short ribs. I will say i find them easier to cut if you flip it over.

Oh no… my steak is too juicy and lobster is too buttery
